Colorado Day 1

Erma Bombeck wrote once about slides. She said not even her pastor would come over if he knew they were showing them. Even her own mother had to be tricked into watching recent vacation slides.

You. You don't have a choice. You're on my blog, you're going to see some pictures!

Monday morning of our vacation started way to stinking early. I was on vacation after all. The girls were awake at 7:30. Oh well, we were surrounded by beauty and had lots to see.

We started out the day by walking around the 10 acres Dad has. Well...I was putting my makeup on. Shawn and the girls were out walking. They'd been gone for a while when I got a text asking if I could come out and take a picture of them on Observation Rock.Dad came out with me so soon I was in the picture also.After I was allowed to finish getting ready, we took a walk around the mile loop near my Dad's property.We were ready for more amazing views.

This is not what we had in mind.I never knew how loud a donkey could be. He was not happy about us walking by.

Awwww, there's the view.This little guy didn't seem to mind us at all.He even took a little sip and let me snap his picture.I am not ashamed to say that I'm quite proud of this picture. It's already framed and in my house.

Always one to be off the beaten path,Dad took us of the road to see a meadow that had another gorgeous view.Apparently we're rule breakers.We were not the only ones who had trespassed though. My girls had no idea what this was and were not at all happy to find out.I had to have a picture taken with the birthday boy. You see, one of the reasons for our trip was to be with my Dad on his 63rd birthday. I hadn't spent one with him in 26 years.After a quick lunch we headed out to hike a trail I found on a wonderful website. We headed out to the Poudre Canyon. In my head I imagined that Poudre was pronounced with a French accent. Pou-drewr. Pardon my French. I don't know how to speak it, or apparently, type it. Sadly it was pronounced with the Hick accent. Poo-derr.

We entered the canyon and started seeing the beautiful Poudre River next to the road. We would be rafting that river on Thursday. I couldn't wait!

When reading about the hike the reviews had said there were over 60 stream crossings. It also said the trail was smooth enough that sandals were safe and made it easier to walk the streams. I wore my cute new (and amazingly comfortable) Chacos.That of course meant that we stopped to play in almost every crossing.It was a bit chilly to our temperature challenged McKinley.Since the trail was 6 miles we decided not to go the whole way. So we took our time and had a little fun along the way.And enjoyed the beautiful of God's creation. Man He did a good job!Well, at this point I've realized if I share the rest of Day 1 this post would be forever long. And as I learned from Erma Bombeck, you have to ease people into vacation pictures!

And it begins...

I told you in yesterday's post that I had 1100 vacation pictures. I warned you actually. Well, there are actually 1400. Considered yourself very warned.

Last summer when my dad moved from Oregon to Colorado he rented a cabin in the mountains with, um...an outhouse. Yep, no running water. After he was here at Christmas he told us to come visit anytime. Well, I'm afraid I'm going to need an indoor bathroom in any vacation destination. A call this spring told us they had moved. Oh happy day! We started talking about a trip.

Growing up living in Colorado for the summers, I feel like it's a part of me. My second home. It's prettier, cooler, and not as flat as my Oklahoma home. I couldn't wait to get there.

We had no idea what to expect when we got to the house. The road leading to it had me worried.

We met my dad at the bottom of the hill and headed up.We never would have found the place following directions.

I was nauseous and leaning in as to not take our car closer to the edge of the drop off. Shawn was loving the curves and the need to 4 wheel drive. But when we got to the end, it was worth it.The view of Fort Collins from the porch made all the queasiness worth it.As the sun went down the view got even more spectacular.But before the sun set we had a quick tour. The cabin was built over 30 years ago and has seen many additions. It all seemed to flow together quite well though.The master bedroom.The view of the living room from the front door. The paned glass door went into the guest room.The girls loved sleeping on the loft bed with the view of town outside the window.Shawn and I shared an air mattress on the floor.

Leaving our room you could see the stove and the glass blocks of the bathroom. And yes, the walls don't go to the ceiling. 'Nuff said.The galley kitchen with the antique stove I coveted.The dining room with its wall of windows.And the stairs leading up to the master bedroom.We also got a tour of the garden that Dad, Elena, and many woodland creatures enjoy eating out of.While outside we also saw this. The old outhouse.

Thank goodness we didn't have to use that. Especially since one night I ate half a watermelon.

What? Who ate half a watermelon? No one I know. The sign on the door was a Christmas gift from me.Years ago while driving through rural Oklahoma my dad decided to follow a 'historical landmark' sign. Leaving the highway and traveling for a while he finally saw the marker. It read,

A dead man was found lying in this gulch.

Yep, that's it. Not when, who, or why. I've mocked him about it for years.

And one last funny. After we'd marked dad's house in our cars navigation we saw this.Yep, he lives on Hernia Hill! After many up and down trips, I certainly believe it!

Just a Jumble...

Going on in my head-

-it's been three days since we got back from vacation and everyone has unpacked except me.

-school starts tomorrow...I'm happy and sad.

-two half birthday parties, 24 extra children, within two days, is coming up.

-my 13 year old just bought size 9 shoes...I wear a 7 1/2, something is very very wrong here.

-I wrote 8 blogs to post while I was out of town so no one would realized I was gone and rob my house.

-now I can't get inspired.

-I do have 1100 pictures from vacation. You've been warned.

-I need to find something to cook for dinner.

-I am not hungry thanks to lunch at one of my favorite places.

-I'll stop now so you don't fall asleep or never come back.

Crock Pot Cobbler

Want heaven in a bowl? Try this. Now. Or as soon as possible. But now is better.

I have avoided blueberries for most of my life, thinking I didn't like them. Luckily I promised my mom before she died that I would have my children eat things that I didn't like.

Guess, what? They're delicious!

I first made this recipe at a family reunion in Branson. The crock pot was licked clean.

Really.

Try it.

Please.

Crock Pot Cobbler
1 c. flour
1 1/2 c. sugar, divided
1 t. baking powder
1/4 t. salt
1/4 t. cinnamon
1/4 t. nutmeg
2 eggs, beaten
2 T. milk
2 T. vegetable oil
2 c. fresh or frozen blueberries
2 c. fresh or frozen blackberries
3/4 c. water
1 t. grated orange peel
Whipped cream or ice cream, optional


In a bowl, combine flour, 3/4 cup sugar, baking powder, salt, cinnamon, and nutmeg.Combine eggs, milk, and oil; stir into dry ingredients until moistened. Spread evenly onto the bottom of a greased 5 quart crock pot.In a saucepan, combine berries, water, orange peel, and remaining sugar; bring to a boil.Remove from heat; immediately pour over batter.Cover and cook on high for 2 to 2 1/2 hours or until a toothpick inserted into the batter comes out clean.Turn cooker off. Uncover and let stand for 30 minutes before serving.Serve with whipped cream or ice cream.

Sorry I don't have a picture of it with whipped cream. I left the girls alone with the spray cream and didn't have any left to photograph!

And what was my snack while I was waiting for it to cook? Guess mothers really do know best:c)
