Taco Dip

**Updated...I used the leftovers two nights later with some tortilla chips and cheese and had Super Nachos!**


I really wish I could come up with a different name for this recipe. The original is actually Taco Joe Dip but since I don't like the name 'Joe', sorry to any readers named that, I have dropped it. I just don't like my food having a human name. Makes it harder to eat.

It's not quite bean dip...more then Mexican Dip...it's just something special.

So...
Something Special Dip
(Yes I know that's unbelievably cheesy, bear with me)

1-15 oz. can kidney beans, rinsed and drained
1-15 oz. can black beans, rinsed and drained
1-15 oz. can corn, drained
1-14 1/2 oz. can stewed tomatoes, undrained
1-8 oz. can tomato sauce
1-4 oz. can diced green chilies, drained
2 T. taco seasoning
1/2 c. chopped onion
Tortilla chips

Mix all ingredients, except chips, in a crock pot. Cover and cook on low for 5-7 hours. Serve with tortilla chips.
*You might notice I don't have green chilies in the picture. I was out so I threw in a can of Ro-Tel type chilies and tomatoes. This recipe is so easy you can do things like that!*

How much easier could that be?? The recipe also says that you can add a 29 oz. can of tomato sauce and make it into a soup. Cook the same length of time.

Now, I think we've well established by this time that I am incredibly high maintenance.

Can I get an amen??

Since I have so many food allergies, and am generally just a picky eater, my ingredients are a little different. I get a migraine every time I eat something with taco seasoning. Even if I buy the brand that doesn't have MSG I will still get one. I can't figure it out. Because of that I use my own homemade seasoning. I use 2 tablespoons of it.
I'm assuming that is equivalent to one package but I honestly don't know! I also can't have fresh onion so I use the dehydrated kind.

Aren't you all happy right now that you don't have to cook for me?? Many of my friends won't even attempt it!

And speaking of picky...I was short on time or I would have put the stewed tomatoes through the blender first. I hate tomatoes! This large piece will cause me personal turmoil later this evening as I try to avoid getting it on a chip!
I hope you'll try this and enjoy it as much as we do.

And if anyone can think of a better name for this please let me know!

I hate tomatoes too! They make me gag! But your dip looks good.

How about Easy Crock Pot Taco Dip?
Long, but tells it like it is!

Looks great. I also have a great Mexican chili that you might like (even with your substitutions). Here it is (can be done in the crock or on the stove):
Brown 1 lb ground beef (or turkey)
Add 1 pkg taco seasoning (or substitute). Stir. Then add:
1 can corn, undrained
1 can Rotel, undrained
1 can diced tomatoes, undrained
1 can kidney beans, undrained

Bring to a boil. Then add 1 lb velveeta (diced for easier melting). Cook until all cheese is melted. Serve.

Tastes even better the 2nd day.
