I don't know why I didn't think to add the recipe to the last post! Blame it on my mental illness that is called 'Life'. It's beating me to a pulp. I've always said that December is the craziest month but January is making a run for the money. Couple that with the fact that I started a job today. A real job. The first one I've had in 8 years. And you're just going to have to wait to hear about it because I am too busy to write!
1 T. butter (no substitutions), softened
1 T. light corn syrup
1/2 t. mint extract
1/8 t. salt
1 c. powdered sugar
1 drop blue food coloring
1 drop yellow food coloring
1 drop red food coloring
Colored sprinkles and cake decorating candies
In a mixing bowl, combine the butter, corn syrup, extract, and salt. Gradually beat in powdered sugar. Knead until mixture forms a ball. Place 1 tablespoon in a small bowl; add blue food coloring and knead until blended. Repeat with yellow and red. Set aside.
Using plain dough, make 16 balls; eight with 1 tablespoon dough for each and eight with 1/2 teaspoon for each. Stack the smaller balls on top of the larger ones, making eight snowmen.
Use the colored dough to form hats, scarves, and earmuffs as desired. Add colored sprinkles and candies for eyes, noses, mouths, and buttons.
I don't want to get my mixer dirty or have to pick the beaters clean so I use a fork, rubber spatula, and brute force.
Now, as you know, I don't always get things to turn out like they should. For some reason this year, we only got five snowmen out of this. I can't explain it. It was some unnatural phenomenon. Every other year I have gotten eight. Please make these for yourselves and let me know if you can figure out what I went wrong.
I really need to know. My life just doesn't feel complete.
